Day 3 Juicing Challenge

So deal is I need to get groceries and had a limited amount of produce to work with.  ha ha. Cause that never happens to anyone. I happen to be having a love affair with purple cabbage. I mean that colour, ridiculous! My staple lunch these day, okay for the past few months is as follows

2 cups Vegetable, water, or miso (fermented soy - MUST be organic) broth*
handful of chopped spinach, kale or chard
2 green onions cut with scissors
1/4c of peas
1/2 to 3/4 c shredded cabbage
1/8 tsp of shredded, crushed, or minced garlic
1/4 tsp of ginger -powdered, if fresh do about 1/2 inch
1/4 tsp turmeric
pepper (activates the turmeric)

bring the above to a boil for about 10 minutes
if you have some black beans (canned or already cooked) add them as well
Add a bundle of soba noodles (I love the butternut squash or wakame rice noodles)
let simmer for another 5 minutes and eat.... mmmm delish, and so soothing on the tummy!

*for Miso broth I cook all the above in water and then add 1 tbsp of miso paste with boiling water, stirring till broken down and add to the soup once it has been removed from the heat.

You can also quickly whip this up to take to work with you by boiling water/broth, put all your vegetables and seasonings in thermos, as well as noodles, and add your liquids. By the time you are ready to eat it the veggies and noodles will be perfectly softened..... the smell is amazing as well. ;-)

So back to Juice... ha ha

Counteractor
A gentle balance of oranges, which are an acidic fruit and red cabbage and ginger which are more alkalizing and soothing on the digestive system... creating a beautiful digestive balance.

3 oranges - we used organic mandarins... needed to be eaten
1/4 red cabbage
1/4 inch of ginger
1 pear - how could you not add a pear, right.

The flavours were surprisingly awesome and subtle.  I have never juiced a cabbage so this was new for me as well.  This was an excellent blend.  Cabbage juice is an excellent remedy for heart burn by the way, that said i would 100% leave out the oranges if you do need it for the burn. ha ha.

This juice is full of beta-carotene, folic acid, vitamin C, Vitamin E, Calcium, Magnesium, Phosphorus, Potassium, and Sodium.

Even passed the 5 and 7 year old kid test.

Hope you enjoy and happy first Friday of 2014!
